Make some holiday eggnog with this classic recipe!
With the holidays right around the corner, people are spending time in the kitchen whipping up holiday treats. One classic holiday drink is homemade eggnog.
My personal homemade eggnog recipe calls for six egg yolks, one and one-fourth cups of heavy whipping cream, two and a half cups of milk, one-third cup of sugar, one-half teaspoon of vanilla extract, one-fourth teaspoon of ground cinnamon, one-fourth teaspoon of ground nutmeg and a pinch of salt.
To make the eggnog first, simmer the milk and cream in a saucepan, and add a pinch of salt. While that simmers, whisk together the egg yolks and sugar in a bowl; this will reach a consistency that is best described as creamy.
Once the egg mixture has reached a proper consistency, carefully add the milk and cream mixture. Use a whisk or a hand mixer on the lowest setting to add the milk mixture while it’s still hot in very small amounts at a time (maybe one-fourth cup not completely filled) until fully incorporated.
Once the mixture is combined, put it back onto low heat, and stir until it begins to thicken. Then, remove from heat and add vanilla, nutmeg and cinnamon.
After this the eggnog is complete. Store your eggnog in the refrigerator, and serve it cold. It is optional to put the eggnog in a blender to create a smoother consistency, but it is not required.
